Gloria: “Casa Gloria is een nieuwe traiteurszaak in de Nederkouter te Gent waar je een grote variëteit aan voornamelijk Spaanse en Belgische gerechten kan vinden, een variëteit die iets vertelt over mijn verhaal en de invloeden in mijn leven.
De keuken is altijd een deel van mijn leven geweest, sinds ik als kind wakker werd met de geur van eten en met het ‘chup chup’ geluid van de snelkookpan waarmee mijn moeder (Teresa ‘la flores’) elke dag met toewijding ons eten bereidde voordat ze naar het werk vertrok. Met de geur van het houtvuur dat uit de open haard kwam die mijn vader elke winterdag aanstak voordat ook hij naar zijn werk ging, zodat zijn 4 dochters het ’s ochtends niet koud zouden krijgen voor ze naar school vertrokken. Met de geur van vers gezette koffie en geroosterd brood, dat mijn vader voor mijn moeder klaarmaakte omdat ze reeds aan het stressen was over wat ze als het avondeten zou gaan koken…
Al die indrukken en aroma’s zijn in mijn geheugen geprent zoals een tatoeage op de huid is gefixeerd. Dat soort ‘thuis’ koken, dat je onthaast doet… in alle rust.
Op de dag dat ik meer dan 20 jaar geleden voor het eerst een professionele keuken binnenstapte (ik moet toegeven dat dit per toeval was!) wist ik meteen dat ik hier de rest van mijn leven zou aan toewijden.
En eindelijk, na lang dromen en ontzettend hard werken, kan ik mijn eigen zaak openen: ‘Casa Gloria’, en dat in mijn favoriete stad! Je kan bij Casa Gloria niet alleen Spaanse, maar ook typisch Belgische gerechten vinden. België, het land dat ondertussen 10 jaar geleden zijn deuren voor mij heeft geopend en mij heeft geadopteerd, het land dat ik eeuwig dankbaar zal zijn.
Hoewel ik bij aankomst de Belgische keuken niet echt begreep, moet ik zeggen dat ik na verloop van tijd niet alleen volledig mee was maar het ook nog eens uitermate geweldig vond! Niet alleen het eten maar ook de mensen, de straten, het systeem, de frietsjes met talloze sausjes, het klimaat… nou ja, het klimaat is misschien wat minder hihi!
Vanaf de eerste dag dat ik voet aan wal zette in Gent, was ik verliefd. Ik vind het geweldig!! Een van de dingen die me het meest opvielen is de grote verscheidenheid aan verschillende culturen en de grote verscheidenheid aan restaurants. Hier wonen is -culinair gesproken- alsof ik over de hele wereld woon, en dat heeft ook een grote invloed gehad op mijn kookstijl.
En Casa kan je types gerechten vinden die deel uitmaken van mijn leven in de keuken, gerechten die me hebben geïnspireerd tijdens mijn reizen, tijdens mijn restaurantbezoeken, uit mijn boeken, van het internet, van mijn vrienden… kortom van alles dat me iets kon bijbrengen.
Naast uiteraard de Spaanse en ook Belgische keuken, kan je bij Casa Gloria nog een beetje van alles ernaast ontdekken, afhankelijk van mijn inspiraties van die dag! Paella, tortilla de patatas, empanadas, belegde broodjes, konijn met knoflook, vol au vent, stoverij, salades, poké bowl, pasta, desserts, dim sum dus zelfs ook een beetje Aziatisch… En in zo goed als elke categorie ook een veggie optie!
Samengevat, gewoon lekker eten, eerlijk en zonder huichelarij. De sauzen, de vinaigrettes, de desserts… Zo goed als alles is zelfgemaakt met verse producten (behalve de gebakjes en het brood – moet gezegd worden), verwerkt met liefde, toewijding en respect.

Gloria: “Casa Gloria is a new food shop located in the Nederkouter in Ghent, where you can find a great variety of mainly Spanish and Belgian cuisine, a variety that tells a little bit about my story and the influences of my life.
The kitchen has always been part of my life, since when as a child I woke up with the smell of food and with the ‘chup chup’ sound the pressure cooker made that my mother (Teresa ‘la flores’) used to prepare our food with devotion every day before going to work. With the smell of burning wood from the fireplace that my father lit every winter day also before going to work, so that his 4 daughters would not get chilly in the mornings before going to school. With the smell of freshly made coffee and toast which my father prepared for my mother because she was already stressed thinking about what she was going to make for dinner …..
All those impressions and aromas are fixed in my memory like a tattoo is fixed on skin. That kind of home cooking, that is prepared without stress, in a peaceful way.
The day that, more than 20 years ago, I stepped into a professional kitchen for the first time (I must admit it was coincidental!), I knew that I wanted to dedicate myself to that for the rest of my life.
At Casa Gloria you can not only find Spanish food, but you can also find typical Belgian dishes. Belgium, the country that opened its doors to me and adopted me years ago, a country to which I will be eternally grateful. Although when I first arrived, I did not understand its type of cuisine, I must say that with time I understood it and absolutely loved it, which was quite a surprise!
And not only the food, but also its people, its streets, its organization, its ‘frietjes’ and many sauces, its climate … well, the climate perhaps a little less hihi!
From the first day I set foot in Ghent I fell completely in love with this city.
One of the things that struck me the most is about Ghent is the great variety of different cultures and the great variety of restaurants, living here has been like living in the whole world from a culinary point of view, and that has also been a great influence.
So in Casa Gloria you can find a little bit of everything, although obviously Spanish and also Belgian styled dishes, you’ll also be able to discover my inspirations of the day. Paella, tortilla de patatas, empanadas, sandwiches, rabbit with garlic, ‘vol au vent’, ‘stoverij’, salads, poké bowls, pasta, deserts, dim sum (so yes even some Asian food)… and in each of those categories I will offer a vegetarian option!
Just food, made with love and devotion, honest and no tricks, all homemade (except the pastries and bread, it must be said), sauces, vinaigrettes, desserts ….. all with fresh products and treated with respect and affection.

Gloria: “Casa Gloria es un nuevo traiteur ubicado en Nederkouter en Gante donde podreis encontrar una gran variedad de platos Españoles y Belgas principalmente, una variedad que cuenta un poquito mi historia y las influencias de mi vida.
La cocina siempre ha formado parte de mi vida, desde cuando de niña me despertaba con el olor a comida y con el chup chup de la olla expres que mi madre (Teresa la flores) preparaba cada dia con devocion antes de irse a trabajar, con el olor a leña quemada que desprendia la chimenea que mi padre (Miguel Fernandez) cada dia de invierno desde bien temprano encendia para que sus 4 hijas no pasaran frio por la mañana antes de irnos al colegio. Con el olor a cafe recien hecho y el olor a pan tostado que mi padre le preparaba a mi madre, por que ella siempre iba extresada preparando la comida, pensando que iba a hacer para la cena… En fin todos esos aromas los tengo fijados en mi memoria como un tatuaje se fija en la piel. Ese tipo de cocina casera, la que se hace sin prisa….con calma.
El dia que pisé por primera vez una cocina profesional hace mas de 20 años (debo de decir que fue de forma accidental), supe que queria dedicarme a esto el resto de mi vida.
En Casa Gloria no solo encontrareis comida Española y Belga, la tierra que me adopto y me abrio sus puertas hace ya 10 años, y pais al que estare eternamente agradecida. Y aunque cuando llegue no entendia nada de este tipo de comida, debo de decir que con el tiempo la entendí y me encanto, cosa que fue toda una sorpresa! Y no solo la comida, sus gentes, sus calles, su organizacion, su clima, sus frietjes y sus salsas….bueno, el clima un poquito menos hiihiiih. El dia que pisé Gante me enamore completamente de esta ciudad, me encanta!!!. En Casa Gloria también encontrareis otros tipo de platos que han formado parte de mi vida laboral, platos que me han inspirado en mis viajes, en mis salidas a restaurantes, de mis libros, de internet, de mis amigos….. de todo lo que me pudiera aportar algo
Entonces, en Casa Gloria podreis encontrar un poquito de todo aunque evidentemente comida Española, Belga principalmente y mis inspiraciones del dia.
Paella, tortilla de patatas, empanadas, conejo al ajillo, vol au vent, stoverij, lasañas, pastas, tambien pensamos en los vegetarianos, …ensaladas, poké bowl ,una variedad de bocadillos, postres, dimsum….
Simplemente comida, hecha con cariño y devocion, sin trampas ni carton, todo hecho en casa (excepto la bolleria y el pan, tambien hay que decirlo), sus salsas, sus vinagretas, sus postres… con producto fresco y con producto local, y tratado con respeto y cariño.
